Belle’s Notebook has been selected at a Top 20 Millennial Career Blog by Feedspot!  Thank you Feedspot for this honor!

This selection has also made me think of the content that I can share in regards to professional lifestyle.  I know there is more to professional development than just career advice, mentors, and development plans.  It includes every part of your life.  I am happy to say that blogs will begin featuring some additional content!

Blogs will expand to some new features over the coming months.  I will be adding more lifestyle topics as part of professional development.  Topics will include relationships, recipes, home life, health, wellness, and fitness.

One of my favorite recipes

Here I was making two batches 🙂

In honor of this I wanted to share one of my favorite breakfast recipes!  It is a two-ingredient pancake and ready in a few minutes. 

Ingredients:

1 banana

2 eggs

Step 1:

Mash the banana in a large bowl.  I typically break the banana into smaller chunks in the bowl and mash the rest with a fork. Mash until there are no large lumps (there may be some smaller lumps but that is ok!).

Mixed batter

Step 2:

Add in the eggs and mix with banana.  Stir until completely combined.  (The batter will be more liquid than regular pancake batter).

  • I also add some cinnamon or vanilla.  You can add any flavorings at this point for a fun pancake!

Step 3:

Add the batter to a heated pan.  (I typically use olive oil and heat the pan before I add the batter).

Step 4:

Flip the pancakes after the edges look set.  The pancakes may be a bit difficult to flip as the batter is more liquid so I recommend to make them small and use a thin spatula to flip. 

Step 5:

Serve warm with any topping you would like!

  • We typically eat them with peanut butter and fruits on top.  They also taste great with maple syrups, jam, fruits, or honey.
